About this deal

Lemon Protein Balls – these aren’t anything at all like the other recipes but I threw it in here because they’re so tasty. ;) Paleo Energy Balls – these are paleo, but they’re date-sweetened, and so they have a firmer texture than today’s recipe with maple syrup. They’re also quite fudgy! step4Spoon about 1 teaspoon of the cooled chocolate onto each ball. Refrigerate until firm, about 30 minutes. Store the candies in a covered container in the refrigerator. Transfer the prepared cereal balls to the baking sheet, with space in between, and bake them for 10 minutes. Then leave them to cool completely. The best part is, they’re delicious at any temperature. You can eat them at room temp, cold or even frozen. Oh my gosh, they’re so good. And because everyone’s preference is different, we make a ton and keep some in the freezer, some in the fridge and some at room temp. That way, they’re always handy just the way we like ’em!They keep great at room temp for about one week, in the refrigerator for 3-4 weeks or in the freezer for up to 3 months. If you’re defrosting them from frozen, leave them loosely covered at room temperature to defrost completely.

Cocoa powder: Use unsweetened cocoa powder or cacao powder (the latter is less processed and loaded with antioxidants and several vitamins/minerals, but more bitter). Milk chocolate cornflake clusters: Use all milk chocolate. For dark chocolate cornflake clusters, use all semi-sweet or 70% chocolate. Crunchy peanut butter and crispy cereal inside a chocolate shell make these Chocolate Peanut Butter Balls one scrumptious holiday favorite we crave year ’round!Chocolate Peanut Butter Protein Balls – here’s one with almond flour! But I have to say that I prefer the texture of today’s recipe with coconut flour. For reasons of hygiene and safety, personal grooming products, cosmetics or items of intimate clothing cannot be returned. No other flour would work as coconut flour is so much more absorbent than other types of flour. Oat flour is also pretty absorbent but not usually a 1:1 sub for coconut flour. I love hearing from you!! If you have tried these chocolate Rice Krispie balls, be sure to scroll down, give them a star rating and let me know what you thought!

Make smaller or larger balls if you prefer. Each of these balls is made with around 4 tablespoons of the mixture. I prefer the smooth texture without the chips, and you can’t even taste the chocolate chips because they blend totally in with the chocolate flavor of the balls. I always add chocolate chips to my brownies and thought it made sense here but… nah. Just save the calories for something else! Stir for about a minute or until it's firmed up and you can roll the mixture into balls. If it still doesn't seem firm enough to roll into balls, let the mix sit about 5 minutes so the coconut flour has time to absorb the moisture. Then add more coconut flour, if needed. For the ultimate rice crispie treat you need to sprinkle with cocoa powder and cinnamon after forming balls.

Chocolate: Actual chocolate pieces give a much richer flavor than using cocoa powder. My favorite concentration of chocolate is a mix of milk and semi sweet chocolate. Not too dark, and not too sweet. You can follow the recipe, or use all of one kind. I already have 15 other ball recipes but not one like this. This one is more fudgy and gooey than the others, which is, believe me, a good thing!

Next, preheat the oven to 320 °F/160 °C, and line a large baking sheet with parchment paper or a silicone mat.

Using almond butter, I use 4 teaspoons of oat/coconut flour. For cashew butter, you may just need 3. What's not to like? Chocolate cocoa marshmallows crispy = (me crunching). Completely delicious, my only changes were to add espresso powder (1 tbsp 2 tsp) into the butter/cocoa and use One Degree's Cacao Brown Rice cereal. Be careful melting the marshmallows into the cocoa as it could burn if you're not mindful. YUM! This healthy chocolate cereal has just 4 ingredients and is gluten-free, dairy-free, and refined sugar-free, made with simple, wholesome pantry staples. Both kids and adults will love these homemade cocoa puffs!

No keto option?

cup (256 grams) unsalted natural almond butter or for non-paleo, natural peanut butter (the only ingredients should be nuts) I wanted to make a paleo option, so I had to remove the oats that you find in most other energy balls. Omitting the oats results in a smoother texture.
